Portable Soft Serve Machine Japanese Style

This Japanese Ice Cream is like your own portable soft serve machine :) . As you can tell by the photo it is a little flexi bag thingy full of soft serve ice cream that you squeeze out into a bowl or cone .. or even just squeeze and suck it out if you can’t wait.

This one is Lotte brand and was Red bean and vanilla flavour and I have seen a chocolate chip vanilla ice cream one as well.

Green Tea Ice With Red Bean and Ice Cream Only In Japan

Nice looking Japanese ice cream dessert found at a little cafe. This delicious looking thing is green tea ice, topped with nice sweetened red beans and then on top of all that a good scoop of vanilla ice cream.

It is a bit of a strange concoction, I am not that great a fan of shaved ice and ice cream together but many Japanese (and, I have heard, Hawaiians) are. For me the recipe of creamy ice cream and watery ice just doesn’t gel.

Japanese Green Tea, Black Sesame and Chestnut Ice Cream Trio

japanese green tea black sesame chesnut ice cream This is an extra special Ice Cream from a tiny little Japanese restaurant. All the flavours were made at the restaurant and were really creamy.

So what do you think theses flavours are, Green Tea ice cream of course but the other two? The dark one looks like a simple chocolate ice cream but is actually Black Sesame and the other vanilla looking one it is chestnut. Superb. The chestnut ice cream was really great and I would like the recipe but it’s not as nice as the Japanese Haagen Daz Mont Blanc ice cream.

Japanese Ice Cream Faces

Japanese Ice Cream Faces, no it is not an ice cream flavour or Japanese ice cream recipes but a little web site from a lovely Japanese girl that makes little sculptures in her ice cream.
I guess she is very talented and because it is ice cream she would really have to work fast before the Japanese ice cream melts. She says there is one must do rule - eat the ice cream after you make the face, don't waste it. :)

Pino Japanese Bite Sized Ice Cream

These little Japanese Ice Creams are delicious. Each Pino is just a little mouthsized portion of flavoured ice cream dipped in chocolate.
I like the mango one better the the green tea, the mango ice cream has a nice fresh taste.

Green Tomato and Wasabi Ice Cream Recipe

I was aked if there were any Green Tomato Ice Cream recipes but I couldn't find any. There are lots of Green Tea ice cream recipes though!
Anyway, I thought I will make my own Green Tomato and Wasabi Ice Cream. Tomato is a fruit so I guess it isn't so wierd as ice cream and the wasabi gives it just a little bite.

Ingredients

2-3 Green Tomatoes
400ml cream
3 egg yolks
100g castor sugar
1 tsp Wasabi paste

Method

Wash then peel the green tomatoes (drop in boiling water for a couple of minutes then plunge in ice water to peel skin easily).
Blend and strain tomatoes to make a green tomato puree.
Pour the tomato puree into a saucepan and simmer until it has reduced to 150ml
Once the tomatoes have reduced, place in a container in the freezer until cold.
Add the cream,egg,sugar and wasabi in a saucepan and cook over very low heat, stirring constantly with a wooden spatula until the mixture starts steaming and thickens slightly. Set aside in the refrigerater until cold.
When both mixtures have cooled, pour the puree into the egg mixture and lightly whisk to combine.
Pour into the ice cream machine and process.
Enjoy!

Yokohama Ice Cream Expo

Japanese Ice Cream fans enjoyed the Yokohama Ice Cream Expo with thousands of people visiting. The organiser, Manabu Matsumoto, said that the beef tongue ice cream from Miyagi Prefecture was the most popular Ice Cream at the expo.

"We have ice cream from all over Japan – from Hokkaido in the north to Okinawa in the south – but beef tongue has been the one that people keep coming back for," he said.
More than 125 varieties of ice cream have been available in the two week festival, including cheese, octopus, prawn and a garlic variety called Dracula's Premium Ice Cream. Another strange or different Japanese Ice cream was flavoured with very finely sliced pieces of pearl from Japans traditional pearl-growing region, mmm crunchy!
Most were selling for around Y300 to Y800 ($2.75-$7.00) for a little tub of ice cream. Most of these ice creams were real acquired tastes.
Many Japanese regions attempt to cash in on local produce, by inventing ice creams that incorporate their tastes, like the Jellyfish Ice Cream from Rakuten, complete with chunks of Jellyfish!.

Marunaga Japanese Plum Flower Ice Cream

These little Japanese ice creams from Marunaga look absolutely fantastic. I haven't tried one, yet, but I am betting that they would be yummy. There are two flavours, both with Red Bean in the middle. I think I would like the Vanilla with nice sweet, tender Red Beans rather than the Green Tea with Red Bean.
And the shape of these little ice creams is meant to be shaped like a flower from a plum tree, pretty.
Marunaga say they were good enough to win a Gold medal in Europe for these Vanilla ice creams and people wrote in for Green Tea flavour so they started making that as well.

Simple Japanese Red Bean Ice Cream Recipe

I haven't posted many Japanese Ice Cream recipes so I am starting to from now.
This ice cream recipe is really good - Japanese Red Bean Ice Cream. I have made Red Bean (azuki) ice cream before but it was a big effort to make, this ice cream recipe is very simple. So here you go a very simple Red Bean Ice Cream to make and enjoy at home. Double Yum :)

Ingredients
1/2 cup sugar
3 egg yolks
1 cup milk
1 1/2 cups sweetened red bean paste
1 1/2 cups heavy whipping cream

Method
1) Beat sugar and egg yolks in a large bowl until it's pale and yellow then set aside.
2) Bring the milk to a boil in a heavy saucepan and then turn off heat.
3) Slowly whisk hot milk into the yolk and sugar mixture. Pour the entire mixture back into the heavy saucepan.
4) Put the saucepan on a very low heat and stir constantly, till it thickens. Do not let it boil! (You are basically making a custard here)
5) Take the mixture off the heat and whisk in the red bean paste really well. Strain the whole mixture into a large bowl to remove lumps.
6) Let it cool for a few minutes and then stir in the cream. Cover and refrigerate overnight.
7) Process according to your ice cream maker's instructions.
8) Important step - share with friends and enjoy this great Japanese Ice Cream!

Japanese Mochi Ice Cream. This Japanese mochi is Strawberry flavour nothing really amazing about it, it's just the everyday mochi ice creams that you can buy at just about any store.

Japanese Haagen Daz|the best ice cream?

Japanese Haagen Daz Mont Blanc ice cream. I keep reading that Haagen Daz makes the best ice cream in Japan but I think it is popular because it is a US company and Japan seems to love anything American. I had their Green Tea ice cream and it was nice but not the best I have had.
This flavour is very very good though, nice and creamy. I had no idea what the flavour should have been as all I know is Mont Blanc is a brand of pens! It is actually a chesnut vanilla ice cream, mmm .

Japanese Ice Cream|Salmon Ice Cream

Is this the strangest Japanese Ice Cream around? I have already posted about Jellyfish Ice Cream, Oyster Ice Cream and Natto Ice Cream (have you seen or tasted Natto , yuck), well this one is up there with them - Salmon Ice Cream! It is soft serve mixed with dried salmon made into a pebbly texture - that would mean fishy lumps in ice cream ... not for me thank you.

Japanese green tea soft cream, yum, one of my favourites. Delicious folds of green tea ice-cream in a crispy cone, on the way to the KIyomizu temple, Japan.
This ice cream is much, much nicer than the ordinary Green Tea Ice Cream from the Japanese Haagen Daz stores.

How to buy the Best Japanese Ice Cream maker

I have posted a couple of times some recipes on a some delicious Japanese Ice Cream. Ones I remember were homemade Japanese Green Tea and Soy Sauce Ice Cream and the yummy, plain Japanese Matcha Ice Cream .

You can make yummy Japanese ice cream at home, as good as any first class store brand, if you select a good quality ice cream maker and follow a few guidelines. Just as the best rice cookers are Japanese so are ice cream makers. Ice cream makers can vary in cost from less than $100 to more than than $500. The more expensive models have integrated freezing compressors , while the less costly Japanese ice cream makers are completely appropriate for use at home and come in two basic types. There is the type that needs rock salt and ice to chill the ice cream concoction and the model that has a container that is placed in your freezer. Both of these Japanese ice cream makers have either an electric crank or a hand crank. Your needs will decide which is right for you.

If you love to make a big amount of Japanese ice cream, you will need to pay for a machine that uses rock salt and ice. The canister models will only make up to one and a half litres of Japanese ice cream in a batch. If you would like to make Japanese ice cream production into a family activity, you can opt for the hand-crank version, it also uses rock salt and ice. The crank must be turned for quite a long time, so every family member gets a turn. The electric crank is a lot easier. You will also get more dependable results owing to the bowl turning at a steady speed. Most electric crank Japanese ice cream makers have an automated shut off feature that will stop the crank when the ice cream reaches the desired consistancy.

After you choose which type of ice cream maker is right for you, you will need to find the perfect Japanese ice cream recipe. Remember that the quicker the ice cream freezes, the better it will taste and the smoother the texture will be. It will be best to pre-mix all your ingredients and let them cool down for several hours before putting them in the Japanese ice cream machine. When your ice cream is ready, it will resemble soft-serve ice cream. You can then place the canister in the freezer for at least a couple of hours and you will get better results. If your canister is plastic, think about taking out the Japanese ice cream as soon as it is ready, and placing it in a metal bowl covered with foil. The metal will allow the ice cream to freeze quicker and become firmer quicker than in a plastic container.

You can buy a mix that is quite easy to make into ice cream very quickly. While the mixes are convenient, the best home-made Japanese ice cream is made from top quality,choice, fresh ingredients. Milk, sugar, eggs, matcha, red bean, green tea, wasabi and cocoa if you desire will give you the greatest results. You can find numerous Japanese ice cream recipes, some which need cooking some which require no cooking. The best ice cream recipes usually contain eggs, however there are many recipes that do not use eggs if you or someone in your family is allergic to them.

Japanese Chocolate Monaka Ice Cream

Japanese Choco Monaka Jambo (Chocolate Monaka Ice Cream). I have a sweet tooth, and this Japanese ice cream was given to me by a friend. At first looks, it's like an ice cream sandwich from any store, until you eat it. The outside crust of the Monaka is made of wafers the same as an ice cream cone and the insides is plain vanilla ice cream. In the middle Monaka ice cream sandwich, there is a layer of chocolate that's not too sweet, just nice.

The Japanese Monaka ice cream has different textures once once you bite into it. The wafer crust melts into the ice cream and then there is a crunch of the hard chocolate centre. The flavours go with each other as well. The Monaka isn't too sweet, because the wafer and chocolate take the sweet edge off the sweet Japanese ice cream. The only problem is that the Monaka wafer shell separate sometimes into two pieces and you end up with sticky hands afterwards.

Green Tea and Soy Sauce Ice Cream recipe

(Servings: 4)
- 3 egg yolks
- 125g (4 1/2 oz.) granulated sugar
- 2 teaspoons soy sauce
- 200 ml milk
- 100 ml heavy cream
- 2 teaspoons (10g) granulated sugar for whipping heavy cream
- 1 Cup strongly brewed green tea (1 1/2 Teaspoons green tea leaves, with 250 ml boiled, not boiling, hot water)

Mix egg yolks with sugar and soy sauce.

Add milk to the egg mixture and strain. Cook over very low heat, stirring constantly with a wooden spatula until the mixture starts steaming and thickens slightly.

Remove from heat and put pan in cold water; mix in cold green tea.

Process mixture in an ice cream maker until partially frozen. Add heavy cream that has been whipped with sugar until soft peaks form. Continue processing until the mixture hardens.

Serve with nuts or praline.

note that this japanese green tea ice cream isn't a strong green colour compared to others, I think the commercial green tea ice cream that is around must add colouring

Anmitsu with ice cream

For those who don't know what Anmitsu is... it is a Japanese dessert that has been popular for many decades. A bit of a strange mix this one and one I don't think would work. Take your regular shaved ice cone and then top it with various types of Japanese Soft Cream. So you can have Rasberry shaved ice with Wasabi soft cream... no thanks. Maybe it is not that bad, maybe.

Cuttlefish ice cream

Sounds a terrible flavour for Japanese Ice Cream (well actually soft cream) - Cuttlefish ice cream!!!. The other ice cream at the back is Lavender Ice Cream.
What did it taste like... well, like vanilla and the Lavender? ... vanilla as well - but pretty colours I guess.

Just a quick post. Here is a beautiful looking Japanese Ice Cream crepe with cookies and cream flavoured ice-cream, strawberries, bananas and cream. Yum!
In the bottom there is corn flakes?? I guess to soak up melted ice cream so it doesn't drip on you.

The shop, designed for ice-cream-makers Ronó in Nagoya, Japan , has a stark, colourless interior that is nothing like a traditional Italian gelateria. The shop is arranged around a sharp-edged, clinical white counter with the walls uniformly tiled, with the exception of one seamless mirrored wall.
“I used muted colours to enhance the colour of the ice-cream,” says Miyake, the shop designer. “The space brightens the ice-cream like a jewel.” The mirrored wall creates two illusions, doubling the size of a small space and making a simple black picture frame and its contents appear to float in mid-air.
Looks more like a hospital or morgue to my eyes, what do you think?
